Cheesecake Stuffed Strawberries
Well Ty has a birthday coming up here quick and so we celebrated this week with my mom and our friends Jamie and James. But we decided to forgo the traditional birthday cake for these birthday treats. They were devoured in about 3.2 seconds... but who's counting right?!
Cheesecake Stuffed Strawberries

1 lb of strawberries
8oz cream cheese
5 Tbsp powdered sugar
1 tsp vanilla extract
1/4 tsp almond extract
2 Graham crackers halves
Directions: Rinse strawberries and cut the tops off (and a tiny bit off the bottom if you want them to stand-up.) Then remove the hull with melon baller. You could also use a paring knife, but I'm telling you the melon baller will make life 10x easier!
Next combine the cream cheese, powdered sugar, vanilla extract, and almond extract with a hand mixer until they are nice and fluffy. Place the cream cheese filling in a pastry bag or ziplock bag with a corner cut off. Fill the strawberries with the filling.
Now place your graham crackers in a plastic bag and crush them up to your desired consistency. I prefer larger pieces because I like the texture element, but if you're more a fan of graham cracker crumbs, go for it! Then sprinkle them on top of your strawberries.
Now you have two options: cover them with plastic wrap and place in the refrigerator until ready to serve... OR eat them right. now.
