Triple Berry Muffins

Well, baby girl is learning to sleep through the night...which we are loving, but often I still find myself awake ready to feed the little munchkin while she sleeps the morning away. So this morning what do I do? Pinterest and Muffins! My guess is I'll have a happy husband when he wakes up to fresh-out-of-the-oven treats! I found this recipe one morning when we had no eggs and boy are they good. Hope you love them as much as we do!











Triple Berry Muffins

1 3/4 c. flour
1 Tbsp baking powder
1/4 tsp baking soda
pinch of salt
1/2 c. + 2 Tbsp sugar, plus extra for sprinkling
1/2 c. milk
1/2 c. vanilla yogurt
4.5 Tbsp butter, cut into pieces
1 1/2 c. mixed frozen fruit

Directions: Preheat your oven to 375 degrees. Line a 12-cup muffin tin with liners, or coat with non-stick cooking spray. Set aside.

Whisk together the flour, baking powder, baking soda, and salt.

In a separate microwave-safe bowl, combine the sugar, milk, yogurt, and butter. Microwave the bowl for about 1 minute or until the butter is beginning to melt. Whisk the mixture until only small pieces of butter remain.

Add the fruit to the flour mixture and toss to coat. Slowly add to the butter mixture. Fold together with a spatula until just barely combined. Your batter will be really thick.

Evenly divide the batter between the muffin tins. Each cup should be nearly full once all the batter is distributed. Sprinkle with sugar. Bake for 25 minutes or until it passes the toothpick test and the tops are a light golden brown. Cool and enjoy! (But just so we're clear... around here we always skip the "cooling" step.. so feel free to do the same!)
