This is the absolute ultimate as far as oatmeal cookies are concerned! These bad-boys are chocked full of oats, peanut butter, chocolate, and cranberries. They are great for dessert OR you, if you are feeling especially daring... eat one for a grab-and-go snack! Can't complain with whole grains and all that peanut butter protein!
Also, just so you know what kind of cookies we are dealing with here... Ty told me these are some of the best cookies he has ever had! Disclaimer: Tyson LOVES food and says "This is one of the best (fill in the blank) that I have ever had!" probably once a week! What can I say?! He's great for my cooking confidence!

Makes: about 2 dozen--depending on how much cookie dough you eat before baking :)
1/2 c. butter
3 eggs
1 c. light brown sugar
1 c. granulated sugar
1 tsp vanilla
1 tsp corn syrup
2 tsp baking soda
1 tsp kosher salt
1 1/2 c. chunky peanut butter
4 c. rolled oats
1 c. flour
1 c. semi-sweet chocolate chips
1 c. dried cranberries
Directions: Place the butter in a microwave safe bowl and heat until melted. Set aside.
In a large bowl combine the eggs, brown sugar, granulated sugar, vanilla, corn syrup, baking soda, and salt. Whisk until combined. Then add the melted butter.
Next add the *peanut butter, oats, and flour. Finally stir in the chocolate chips and cranberries until evenly distributed.
Preheat your oven to 350 degrees F. and let your dough rest for about 30 minutes.
Using a 1/4 measuring cup, drop dough onto a non-stick cookie sheet. Flatten slightly with your fingers. Bake for 10 minutes. Cool and enjoy!
*Tip of the day: If your peanut butter is super thick microwave it first for about 15-20 seconds to make it infinitely easier to combine into your batter!
