Lettuce Wraps

My two favorite things at P.F. Chang's are the oh-so famous lettuce wraps and their chocolate cake affectionately called "The Great Wall of Chocolate." Who would have thought right? Chinese restaurant chocolate cake... I'm just sayin' I looove it!

But enough about that. Today is all about the lettuce wraps. Our family loves this copy-cat recipe. Serve it along side some rice and you're good to go! {Bonus} This recipe is just as good the next day. So embrace those leftovers!!



Lettuce Wraps

Serves: 4-5

2 lbs ground turkey
1 medium onion, chopped
1 Tbsp olive oil
1 heaping Tbsp garlic, minced
2 Tbsp fresh ginger, peeled and minced
8 oz can sliced water chestnuts, drained and chopped
3/4 c. green onion, chopped
salt and pepper, to taste
2 heads iceberg lettuce

For Sauce:
2 Tbsp sesame oil
1 Tbsp water
2 Tbsp peanut butter
1 Tbsp honey
2 Tbsp + 2 tsp rice vinegar
1 Tbsp + 1 tsp sweet chili sauce
1/4 c. + 1 Tbsp soy sauce

Directions: Begin by combining all sauce ingredients in a microwave-safe bowl. Microwave for 20 seconds, and stir until well combined. Set aside.

Next brown the ground turkey in a large skillet and season with salt and pepper. In a separate pan, heat olive oil over medium-high heat. Add garlic and onion and saute for 2-3 minutes then add to the ground turkey. Add ginger and sauce to the skillet and then stir to combine.

Finally add the water chestnuts and green onion. Serve with lettuce leaves and ENJOY!
